Our Double-Cooked Chicken Wings

We clucking love chicken wings and this one is for all you wings lovers (generally the mucky clucks with sauce smeared all over their faces, hands and t-shirts).

Our wings are double cooked so the meat falls of the bone and the skin is proper crispy. You can find them on our menu all week and available with a choice of all of our homemade sauces. Every Wednesday, Wings Wednesday, we give you free wings with every main meal. So get stuck in people…

But where did it all begin?

The Buffalo Wings.

Back in 1964, Teressa Bellissimo, the co-owner and chef of Anchor Bar in Buffalo, New York (where the name comes from, obvs) created one of food’s happiest ever accidents.

It all came about from a mistaken delivery: chicken wings instead of chicken necks and backs, which the Bellissimo family typically used to make their spaghetti sauce.

From here on in, the story gets a bit confusing.

The first version of how the wings were created is that Dominic Bellissimo (son of Teressa) came into the bar late one Friday night with his friends and asked his mother to throw them together a quick snack. Teressa was in the kitchen preparing some chicken stock for making soups and sauces using the chicken wings, so she decided to broil some instead and serve them to her son and his mates.

Probably because she thought they’d be too pissed to notice.

But Dominic used to tell a different and slightly more colourful story. The bar used to attract a large crowd of Catholics and, at the time, it was usual for Catholics to only eat fish and vegetables on a Friday. So Dominic thought, on one particularly busy Friday night that, as a thank you to his customers, he would bring something free out for them to eat at midnight when they were permitted to eat meat again.

He asked his Mother to put something together and all she could find was a crate of chicken wings in the kitchen. Hallelujah.

Finally, Frank Bellissimo (husband of Teressa) has got his own story. It’s the simplest one, so it’s probably true.

Basically the bar got some wings delivered by accident. And they cooked them up a storm.

The one thing they do all agree on, is that, after some time experimenting, Teressa emerged from the kitchen with fried wings covered in a melted butter, vinegar and hot pepper sauce, served with celery and blue cheese salad dressing.

And then it kicked off.

The popularity of Buffalo Wings in is in part thanks to the American Football team “Buffalo Bills”, who made it to the Super Bowl four seasons in a row between 1990-93.

During this period the area of Buffalo garnered a lot of media attention. The local food scene was covered and in particular a light was shone on the wings that had, by now, become synonymous with the area.

So, here’s to you Teressa and your wings that are truly bellissimo!

Flippin’ ell, it’s international beer day on Friday! International Beer Day is a global celebration of beer, taking place in pubs, breweries, and backyards all over the world. It’s a day for beer lovers everywhere to raise a toast to our brewers and bartenders and rejoice in the greatness of beer!

Our Flip the Bird IPA is brewed by The Brightside Brewing Company in Manchester and is ‘American in style and multi-national in hop content (mostly US with a touch of NZ)! Lightly caramelised malts provide the central core, but the American Cascade is the main attraction bringing bold grapefruit and floral aromas to the beer, which finishes with a clean, refreshing bitterness’.

Salt ‘n’ Pepper Chicken + Chips Launch

The (apparently) Scouse-Chinese flavour sensation is taking over Yard & Coop from Thursday 26th July and for the rest of the summer.

Word has it that it was first knocked up in Chinese takeaways in Liverpool as a way of giving chip shop chips a little Chinese upgrade. Soon it spread across the country and now it’s made it’s way to Yard & Coop and the fried chicken we’re famous for.

We set about coming up with our own take on salt & pepper and, not to brag, it’s delicious. Made with green pepper, onion and red chilli its sweet, its salty, its spicy, its garlicky and once you start eating it you simply cannot stop. We love it so much we wanted to cover the whole menu in the stuff but somehow we managed to limit it to three amazing dishes.

First there’s our take on the classic Salt & Pepper Chips, a little like you’ve had before but with that extra Yard & Coop twist from our home-made sauces. Then our always delicious falling-off-the-bone Chicken Wings are taken to another level now we’ve salt and peppered them up. And finally there’s the new Salt & Pepper (W)rap; an amazing combination of mouth watering salt & pepper chicken, rice and Asian style slaw, slathered with a couple of home-made sauces and all rolled up in a tortilla wrap.

Celebrating the Nations favourite Bird

National Fried Chicken Day (THURSDAY 6TH JULY) is just round the corner, and to celebrate we’ll be having Fried Chicken Week at Yard & Coop. We all tend to have a preference, breast or thigh, wings or drums, but we want to showcase the whole bird in all her glory so are offering “THE BIG BIRD” for those who haven’t quite made their mind up, or who simply haven’t tried all of our different cuts.

The tray holds: A whole bird fried, Yard Slaw, Mac & Cheese, Dirty fries, All our sauces and chicken gravy.

The quality of our chicken is something we are all incredibly passionate about here at Yard & Coop and this means we only get our chickens from one farm in Shropshire, to ensure traceability, good animal welfare standards and consistency. Our chicken is from farm to fork in 48 hours, including our marinating to ensure the chicken is second to none.

When our chicken gets to you, it has been brined for up to 12 hours, tenderising the meat, whilst adding flavour and moisture to the bird. It is then washed and prepped, before being smothered in buttermilk and coated in our secret crumb.

Did you know we tried over 500 crumb recipes before deciding on ours? We needed to make sure there was nothing better! We then fry our chicken in special fryers which ensures the chicken keeps its juicy tenderness whilst still having a crispy crumb coating. We serve it hot, crumb coated and perfectly moist.

So for this year’s National Fried Chicken Day, we’re offering the THE BIG BIRD chicken feast all week long. World Gin Day

World Gin Day is around the corner (literally, it’s on Saturday June 9th), so we’ve taken the nations favourite spirit and created some fabulous cocktails for you to celebrate with this weekend.

With so many amazing gins about at the moment we thought long and hard about which one to choose. We finally settled on Aviation Gin, and that decision had absolutely nothing to do with Ryan Reynolds…

Aviation Gin is Americas first craft gin, and was created for a love of prohibition cocktails and a desire for a well balanced and smooth gin. Aviation has 7 main botanicals, and is perfect in cocktails due to the subtlety of its juniper.

So here are our cocktail specials…

RECIPE: Great Grandma’s Stuffing Balls

Stuffing Balls

Our menu has influences from all over the World. But here’s how one of our great grandma’s recipes of a British favourite, got a Yard & Coop twist and ended up on our menu.

When we thought of what to put on our new menu we considered staple favourites like everybody’s favourite meal of the week: Sunday Dinner! Already having our ‘Winner Winner Chicken Dinner’ we wanted a perfect side dish to compliment this, which could also be enjoyed on their own. What did we come up with? Stuffing balls!

This is one of our great grandma’s recipes, and whenever we have it, the taste just takes us right back to our childhood. We spoke to Lesley, the mum of co-owner Carl Morris, about its creation.

“My grandmother used to cook stuffing at Christmas using sausage meat and chestnuts, with sage and onion. So, one Christmas I copied the recipe and it went down a treat. Since then, it’s the only way I’ll make stuffing.”

Lesley’s father was one of the first organic farmers in the UK so all the ingredients were organic and from the farm – including the sausage meat! This made it taste even more special. Having had it at our family dinners we wanted to recreate the dish but put a Yard & Coop stamp on it. So we deep fried it. Obvs.

We serve the deep fried stuffing balls with our homemade chicken gravy, a drizzling of cranberry sauce and a sprig of thyme. And they’re magical.  Give them a whirl next time you pop by, we’d love to hear your thoughts.

Make your own at home:

Enough Ingredients to stuff a big bird:

Diced Red Onion 300g
Diced Celery 300g
Sausage Meat 750g
Cooked chestnuts 200g
Fresh Sage 50g
Chicken stock 600ml
Salt 2g
Pepper 2g
Herb de Provence 15g
Eggs 2
Breadcrumbs 150g

 

Method:

  1. Sweat the onion, celery, herbs and sage with salt and pepper for 10 minutes on a medium heat.
  2. In a separate pan, chop the chestnuts and break up the sausage meat and cook through until lightly coloured.
  3. Combine the vegetable mix in with the sausage meat and chestnuts.
  4. Add the stock and reduce for 10 minutes on a medium heat
  5. Mash all ingredients into a pulp.
  6. Add the egg and mix through.
  7. Add the breadcrumbs and mix through.

For stuffing – flip the bird and stuff it

For stuffing  balls – make into 35g balls, coat in panko bread crumbs and deep fry

 

Deep Fried Magnum

We deep-fried something again. Introducing the Deep-Fried Magnum Ice Cream PORN FLAKE.

After the success (and yumminess) of the deep fried egg, we thought what could we deep-fry this bank holiday that people would love. Lets be honest, British bank holiday weather is notoriously rubbish, so we decided to create something that can be devoured come rain or shine.

Since our crème egg, we’ve been playing with our food a bit more (Sorry mum!). We have been deep frying different treats, and tested deep fried ice cream. Its great – but in classic Yard & Coop style we wanted to take it to the next level!

This time, we’re working with Magnum, the king of ice creams (and our all time favourite) to create a delicious, gooey hot and cold delight. We mixed cornflakes with cinnamon and honey for a tasty, crunchy coating and deep fried the ice cream for 15 seconds. The result? A crunchy, sweet coating, with warm melted chocolate. And the ice cream centre? Still cold!

We have a choice of Classic Magnum or White Magnum, and its flavor explosion and orgasmic taste means it can have only one name: The Pornflake Magnum. Available 3rd-7th May – get it whilst its hot (and cold).
